"If You Can't be in Italy, We'll Bring Italy to You!"Class Instructor: Maurizio Moretti from Florence, ItalyDates: Thurs., April 4, Fri., April 5, or Sat., April 6, 2013 Time: 10:30 a.m. Cost: $75.00 MENU TO INCLUDE:Fettunta, Crostini Toscani, Crostini con Zucchini (Fettunta, Chicken Liver Crostini, Crostini with Zucchini) Gnocchi di Patate con Funghi (Potato gnocchi with mushroom sauce) Torta di Ricotta con Salsa di cioccolato (Ricotta cake with chocolate sauce) I was born in Florence on 1 July 1960. After having graduated from secondary school (Liceo Scientifico) and having spent some years at university studying economics and commerce I started working in the textile industry, but after a few years it became clear to me that my real career was in catering, so I enrolled at the Institute of Culinary Arts (Istituto di Arti Culinarie Etoile) of Chioggia, where I obtained a diploma. In 1995 I opened a small restaurant in the centre of Florence called “Du Monde”, which specialized in Tuscan and Mediterranean cuisine. In 2001 I started providing catering services, cooking courses and working as a personal chef, which I still to do this day. I collaborate with Good Taste of Tuscany, Castello di Casole, Timbers Resorts, the Ferragamo group, and Exclusive Resorts (based in Denver). I hold cooking courses in Tuscany, in Italian and French but mostly in English as 90% of my clients are American, where we make typical dishes with fresh seasonal ingredients. I was also a personal chef for Gary Larson (creator of the cartoon series The Far Side) for a week. With my catering business I have been involved in coordinating weddings, parties and incentives, particularly in the fashion world. I cater for private dinner parties in the homes of Florentine families. I speak Italian, English and French.

Class Instructor: Jay Ducote Dates: Friday, April 26, or Saturday April 27, 2013 Time: 10:30 a.m. Cost: $75.00 MENU TO INCLUDE: Course 1: Jay's Bite and Booze Antipasti with Fresina's Italian Sausage, cheeses, cured meats, pickled pears, and more.
Course 2: Italian Beef Cannelloni - Garlicy beef, wrapped in pasta sheets, covered in tomato sauce and cheese, then baked until golden brown. Served with a Sensation Salad using Baton Rouge's own Hanley's Sensation Dressing. Course 3: Orange and Ricotta Cake with Almond Crust.
COOKING CLASS POLICIES:
Space in classes may be reserved by calling the shop @ 225-926-1341 or toll-free @ 1-866-926-1341.
A credit card number is required to hold your spot or you may pay in cash at the shop when making your reservation. A full refund will be made if you cancel up to one (1) week prior to the scheduled class. After that, if you fail to attend the class and we are unable to fill the spot, your credit card will be charged the full amount for the class.
Class size is limited to 8 with a minimum 6. If in the unlikely event a class is not completely booked, Fresina's Italian Specialties reserves the right to cancel the class and reschedule the class participants for another class date.
